Soft and Fudgy Chocolate Sugar Cookies

These cookies offer a rich twist on a classic treat, combining the depth of cocoa with the soft, tender texture of a traditional sugar cookie. The dough is creamed for five minutes to ensure fluffiness, then chilled to maintain its shape. Rolling each ball in granulated sugar before baking adds a subtle crunch that contrasts beautifully with the fudgy interior.

Instructions

  1. Cream Dough

Using a mixer, cream the butter and brown sugar together until fluffy, which takes about five minutes.
  2. Add Wet and Dry Ingredients

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla. In a separate bowl, combine the cocoa powder, flour, baking soda, and salt. Gradually add this dry mixture to the butter mixture and mix well.
  3. Chill and Preheat

Refrigerate the dough for one hour. Meanwhile, preheat the oven to 350°F.
  4. Shape and Coat

Scoop the dough using a cookie scoop. Roll each ball in the granulated sugar to coat it thoroughly. Place the coated dough balls on a parchment-lined baking sheet and gently press down to slightly flatten the tops.
  5. Bake and Finish

Bake for 9 to 10 minutes. Once removed from the oven, lightly sprinkle the tops of the cookies with additional sugar.

Tips

For an extra treat, mix white chocolate chips into the dough before refrigerating it.

About this recipe

This recipe produces cookies that are notably sweet, soft, and fudgy thanks to the combination of brown sugar and cocoa powder in the dough. The brief chilling period is essential for the dough to handle well, while the generous coating of granulated sugar gives them a classic sugar-cookie appearance. You can also mix in white chocolate chips before chilling for added texture. Serve them warm with a glass of milk or pack them for a snack, as they hold their softness well.
