Eggless Soft and Fluffy Dinner Rolls
These eggless dinner rolls are light, airy, and perfect for any meal. The recipe uses simple pantry staples and can be brushed with milk or butter for a golden finish.
Instructions
-
Warm the milk slightly (if using fresh milk) and combine it with sugar, instant yeast, and salt in a mixing bowl. Stir until the yeast dissolves.
Add the flour gradually, mixing until a shaggy dough forms.
Incorporate the margarine or softened butter, kneading the dough until smooth and elastic, about 8–10 minutes. If the dough feels too wet, add a little more flour; if too dry, add a splash of milk.
Cover the dough and let it rise in a warm place until doubled in size, roughly 1–1½ hours.
Punch down the risen dough and divide it into equal portions. Shape each portion into a roll and place on a parchment‑lined baking sheet, leaving space between rolls.
Cover the shaped rolls and let them proof until puffy, about 30–45 minutes.
Preheat a conventional oven (bottom heat only) to a moderate temperature (around 350°F). Brush the tops of the rolls with fresh milk or melted butter for a glossy finish.
Bake for 20–30 minutes, or until the tops turn a light brown.
Remove from the oven, let cool slightly, and serve warm.
Tips
If the dough is overly sticky, sprinkle in a little extra flour during kneading. For a richer flavor, use melted butter instead of margarine in the dough. Brushing with milk gives a softer crust, while butter yields a richer color.

About this recipe
The rolls are made with a basic yeasted dough that omits eggs, relying on milk (or plant‑based alternatives) for richness and tenderness. The result is a soft, fluffy roll that holds up well for buttering, sandwiching, or serving alongside soups and stews. Serve warm, brushed with melted butter or milk, for an inviting aroma and a lightly crisp crust.
Because the dough is forgiving, you can adjust the moisture by adding a bit more flour or milk as needed. The same batter can be shaped into eggless donuts for a fried or baked treat, making it a versatile base for multiple recipes.
