Classic Spritz Cookies

EasyDifficulty

Instructions

2 steps
  1. Prepare the dough

In a large bowl, cream the softened butter with the granulated sugar until the mixture is light and creamy. Add the egg yolks, milk, vanilla extract, and almond extract, mixing until fully incorporated. Stir in the flour and salt until a smooth dough forms. If desired, color the dough with food coloring.
  2. Press and bake

Do not refrigerate the dough. Load it into a cookie press and press shapes onto an ungreased, room‑temperature cookie sheet. Optionally decorate with colored sugar or sprinkles. Bake in a preheated 350 °F oven for 9–11 minutes, or until the cookies are set but not browned. Cool on the sheet briefly, then transfer to a wire rack to cool completely. Allow the sheet to cool before pressing more cookies.

Tips

The dough should stay at room temperature; refrigerating can make it difficult to press. Use a new cookie press for a larger yield (7‑8 dozen) or an older press for fewer cookies (3‑4 dozen). Store cooled cookies in an airtight container.

About this recipe

These classic spritz cookies are buttery, lightly crunchy, and just sweet enough for a holiday treat. Made with a simple dough of butter, sugar, egg yolks and a touch of vanilla, they are pressed into shape with a cookie press and baked until set but not browned.

The cookies stay soft inside with a faint crisp edge and can be left plain or decorated with colored sugar, dragees, or sprinkles. They store well in an airtight container, making them perfect for gifting or a quick snack.
