Instructions
-
In a large bowl or stand mixer, combine the melted butter, granulated sugar, and brown sugar. Mix on low speed until smooth.
-
Add the egg and vanilla extract. Mix on medium speed until fully combined.
-
Stir in the baking soda and salt. Slowly add the flour and mix just until the batter is smooth and holds together. Scrape the sides of the bowl as needed.
-
Gently fold in the chocolate chips until distributed throughout the dough.
-
Line a cookie sheet with parchment paper or a silicone mat. Scoop 2-tablespoon balls of dough onto the sheet. It is okay if they are close together since they will be chilled.
-
Cover the dough balls with plastic wrap and refrigerate for at least 2 hours.
-
Preheat the oven to 350°F. Line a second cookie sheet with parchment paper or a silicone mat.
-
Remove the chilled dough balls from the refrigerator and place them 2 inches apart on the prepared sheet.
-
Bake for 11-15 minutes, or until the edges are light golden and the tops are no longer shiny.
-
Let the cookies cool on the baking sheet for at least 10 minutes before removing them.
Tips
Scoop the dough balls before chilling; spacing does not matter at this stage because the dough will firm up in the fridge.
