Chewy Molasses Spice Cookies

MediumDifficulty

Instructions

  1. In a large bowl whisk together the flour, baking soda, ginger, black pepper, allspice, kosher salt, and cloves until evenly combined.
  2. In a separate bowl combine the melted butter, dark brown sugar, eggs, molasses, apple cider vinegar, and vanilla extract. Mix with a stand or hand mixer on medium speed until smooth.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until incorporated. The dough will be thick.
  4. Cover the dough, chill for at least 30 minutes, or until firm enough to handle.
  5. Preheat the oven to 350°F (177°C). Scoop tablespoon‑sized portions of dough, roll each ball in demerara sugar, and place on a parchment‑lined baking sheet, spacing about 2 inches apart.
  6. Bake for 10–12 minutes, or until the edges are set but the centers still look slightly soft. Let the cookies cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
