Vegetarian Herb Stuffing

This vegetarian stuffing brings classic holiday flavor without any meat. Fresh herbs, sautéed vegetables, and a moist bread mixture make it a crowd‑pleasing side for Thanksgiving or any celebration.

EasyDifficulty

Instructions

  1. Dice vegetables

Trim and dice the celery and onions into bite‑size pieces.
  2. Prepare herbs

Roughly chop the fresh herbs and set them aside.
  3. Sauté in butter

Melt butter in a large skillet and sauté the diced celery and onions until softened.
  4. Add herbs and bread

Stir in the chopped herbs and dried bread cubes, coating them with the butter mixture.
  5. Mix in eggs and stock

Beat the eggs, then pour them over the mixture along with enough stock to achieve a moist consistency; stir until evenly combined.
  6. Adjust moisture

Check the mixture; it should be damp but not soggy. Add a little more stock if needed.
  7. Transfer to baking dish

Spread the stuffing evenly in a greased 9x13‑inch glass dish.
  8. Bake

Place the dish in a preheated oven and bake until the top is golden brown and the interior is set.
  9. Rest and serve

Let the stuffing rest a few minutes, then serve warm with gravy if desired.

Tips

For extra flavor, toast the dried bread cubes before mixing them in. If you prefer a crispier top, sprinkle a little extra butter over the surface before baking.

About this recipe

The dish combines diced celery and onions with butter, then folds in plenty of fresh herbs and dried bread cubes. Eggs and stock are added to keep the stuffing moist and fluffy, while a quick bake finishes the texture. The result is a fragrant, hearty side that pairs well with turkey, roasted vegetables, or gravy.

Serve the stuffing hot from the oven, scooped onto a serving platter. It stays deliciously moist whether you spoon it onto a plate or let guests help themselves from a buffet spread.
