About this recipe
Mushroom duxelles is a finely chopped mushroom mixture that’s cooked down until it becomes a dense, aromatic paste. This version combines minced mushrooms with onion, garlic, butter, white wine, and fresh rosemary, creating a rich, herb‑forward stuffing that’s both vegetarian and versatile. Serve it alongside roasted poultry, inside a turkey, or as a topping for mashed potatoes to add depth and earthiness.
Because the recipe relies on sweating aromatics and slowly reducing the liquid, the end result is a moist yet dry‑enough stuffing that holds its shape. It can be prepared ahead of time and reheated gently before serving, making it a convenient addition to any festive spread.
