Instructions

  1. Prepare the bacon and aromatics

Cook the bacon until crispy and render the grease, setting aside 3 tablespoons of the liquid. Remove the bacon from the pan and chop the cooked bacon into strips or pieces. Peel and mince the garlic. Clean and slice the mushrooms. Peel and dice the small onion if using.
  2. Make the mushroom cream sauce

Warm the 3 tablespoons of rendered bacon grease (or butter/oil) in a saucepan over medium heat. Add the minced garlic, sliced mushrooms, and diced onion. Sauté until the mushrooms are tender and water has evaporated. Sprinkle the all-purpose flour over the mixture and stir constantly for a few minutes to form a paste. Gradually whisk in the heavy cream until smooth. Season with lemon pepper and salt to taste.
  3. Assemble the casserole

In a 9x13 baking dish, arrange the fresh green beans and the cooked bacon pieces. Pour the hot mushroom cream sauce evenly over the beans and bacon.
  4. Bake and top

Place the dish in a preheated oven set to 375 degrees Fahrenheit. Bake for 45 minutes. Before serving, sprinkle crispy fried onions over the top of the casserole.
