Mini Apple Pie for Two

These mini apple pies use a simple butter‑streusel crust instead of traditional pastry. Perfect for a cozy dessert for two, they’re baked in 5‑inch pie tins and come out warm, bubbly, and golden.

EasyDifficulty

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl combine the flour, 1/2 cup sugar, egg yolk, and baking powder. Stir in the melted butter until the mixture resembles coarse crumbs.
  3. Divide the dough in half. Press one half (about 1/4 of the total dough) evenly into the bottom and up the sides of each of the two 5‑inch mini pie tins.
  4. Core, peel, and slice the apples into 1/4‑inch pieces, then arrange the apple slices in the prepared pie shells.
  5. Sprinkle each pie with half of the cinnamon and the remaining 1 Tbsp sugar.
  6. Crumble the remaining dough over the apples, breaking it into small pieces.
  7. Bake for 35–40 minutes, or until the apples are bubbly and the topping is golden brown.

Tips

If the crust browns too quickly, cover the pies loosely with foil for the last 10 minutes of baking.
