Homemade Apple Pie Filling
This sweet and spiced apple pie filling is made from fresh apples and a simple butter‑sugar mixture. It’s perfect for pie crusts, turnovers, or a warm topping for ice cream.
Instructions
-
Prepare the apples
Core and slice the Granny Smith and Honeycrisp apples into uniform pieces. -
Cook the apples
In a large saucepan, melt the butter over medium heat. Add the apple slices, both sugars, cinnamon, nutmeg, cloves, salt, lemon zest, and lemon juice. Cook, stirring occasionally, until the apples begin to soften, about 8–10 minutes. -
Thicken the filling
In a small bowl whisk together the cornstarch and water until smooth. Stir the mixture into the apples, continue cooking for another 2–3 minutes until the sauce thickens and becomes glossy. Remove from heat and stir in the vanilla extract. -
Serve or store
Use the filling immediately in a pie or other desserts, or let it cool and store in an airtight container in the refrigerator for up to a week.
Tips
For an extra glossy finish, simmer the filling uncovered for a minute longer after adding the cornstarch slurry. Adjust sweetness by tasting and adding a little more sugar if desired.

About this recipe
The filling combines two varieties of crisp apples with butter, a blend of granulated and dark brown sugars, and classic warm spices like cinnamon, nutmeg, and cloves. A touch of lemon zest and juice brightens the flavor, while cornstarch and a little water create a glossy, thickened sauce that holds together beautifully.
Serve the filling hot or cooled in a classic apple pie, spoon it over pancakes, swirl it into yogurt, or store it in the refrigerator for quick dessert upgrades throughout the week.
