Instructions

  1. Prep and Crust

Preheat the oven to 350F (175C) and line a metal 13x9 baking dish with parchment paper. In a food processor, combine flour, sugar, cornstarch, and salt. Pulse to combine. Add cubed butter and pulse in 1-second intervals until incorporated and pieces are smaller than a chocolate chip. Drizzle in heavy cream and pulse until the dough is just beginning to hold together. Press this mixture firmly and evenly into the bottom of the prepared pan. Bake in the center rack for 25-30 minutes, until light golden brown.
  2. Mix Filling

While the crust bakes, whisk together pumpkin puree, brown sugar, vanilla, cinnamon, ginger, allspice, nutmeg, and salt in a large bowl until combined. Gently stir in the eggs one at a time, mixing just until combined after each addition to avoid over-mixing. Stir in the heavy cream until the batter is smooth and uniform.
  3. Bake and Chill

Remove the baked crust from the oven and reduce the oven temperature to 325F (165C). Pour the filling evenly over the crust and return to the oven. Bake for 28-30 minutes, until the edges are set and the center has a slight jiggle. Cool at room temperature for 1-2 hours, then refrigerate for at least 4-6 hours to set completely.
  4. Serve

Slice the bars before serving. Top with homemade whipped cream, if desired.

Tips

Use a metal baking dish for best results, as glass or ceramic may take longer to bake. Store leftover bars in an airtight container in the refrigerator for up to 4 days.
