Soft Frosted Vanilla Sugar Cookies
These cookies are soft and flavorful, topped with sweet vanilla buttercream and sprinkles. They are easy to make without chilling the dough or using a rolling pin.
Instructions
-
Preheat and Prep
Preheat oven to 350°F (177°C) and line baking sheets with parchment paper. -
Cream Butter and Sugar
In a large mixing bowl, use an electric mixer to mix butter and sugar until light and fluffy. -
Add Wet Ingredients
Add egg, egg yolk, sour cream, vanilla extract, and almond extract, and stir well until completely combined. -
Combine Dry Ingredients
In a separate medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. -
Form Dough
Gradually add dry ingredients to the wet mixture, stirring on low speed until well combined. -
Scoop Cookies
Drop dough by 2-tablespoon (40g) scoops onto the prepared sheet, spacing at least 2 inches (5cm) apart. Optionally roll dough between palms to smooth, noting it is sticky. -
Bake
Transfer to the center rack and bake for 10-11 minutes. -
Flatten and Cool
Immediately after removing from the oven, lightly flatten each cookie by gently pressing down with a flat surface, such as the bottom of a large measuring cup. Allow to cool completely before frosting. -
Make Frosting
In a medium bowl, beat butter until smooth and creamy. Gradually add powdered sugar, mixing on low speed until combined. Add vanilla and salt, stirring to combine. Add food coloring if using, stirring until even. -
Decorate
Once cookies are completely cooled, spread frosting evenly over them. Decorate with sprinkles if desired.
Tips
Store cookies in an airtight container at room temperature for up to 5 days. They freeze well. The frosting crusts and sets up but remains soft like buttercream, so avoid stacking.
