Gingerbread Cookies with Simple Icing

MediumDifficulty

Instructions

  1. Sift together the flour, ground ginger, cinnamon, baking soda, cloves, and sea salt. Set the dry mixture aside.
  2. In a separate bowl, beat the softened butter with the light brown sugar until creamy. Add the egg and molasses, mixing until fully combined.
  3. Gradually add the sifted dry ingredients to the wet mixture, stirring until a smooth dough forms.
  4. Cover the dough, flatten into a disc, and refrigerate for at least 30 minutes to firm up.
  5. Preheat the oven to 350°F (175°C). On a lightly floured surface, roll the chilled dough to about ¼‑inch thickness. Use gingerbread cookie cutters to cut shapes and place them on parchment‑lined baking sheets.
  6. Bake the cookies for 8‑10 minutes, or until the edges are set and lightly browned. Allow them to cool completely on a wire rack.
  7. While the cookies cool, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk amount to achieve a drizzling consistency.
  8. Spread or pipe the icing onto the cooled cookies. Sprinkle with decorative sprinkles as desired. Let the icing set before serving.
