Chewy Brown Butter Chocolate Chip Cookies
These cookies feature a caramelized brown butter base that pairs perfectly with semi-sweet chocolate chips. They come out crisp on the outside and chewy inside, with a finishing touch of sea salt flakes.
Instructions
-
Brown the butter
Melt the butter in a deep skillet. Once it foams, whisk it around until it turns a nice caramel color. Remove from heat and let it cool. -
Prepare dry ingredients
In a separate bowl, whisk together the flour, baking soda, and salt. Set aside. -
Cream butter and sugars
In a stand mixer or large bowl, combine the browned butter with the brown sugar and white sugar. Beat until combined. Mix in the vanilla extract. -
Add eggs
Add the egg and egg yolk one at a time, beating well after each addition until the batter is smooth. -
Combine dough
Add the flour mixture in thirds, beating between additions and scraping down the bowl. -
Fold in chips
Remove the bowl from the mixer and stir in the chocolate chips using a wooden spoon. -
Scoop dough
Using a 2-inch (5cm) ice cream scoop, place 6 scoops of batter onto parchment-lined baking sheets to allow room for spreading. -
Bake cookies
Bake at 350F (175C) for 15 minutes, or until the cookies are set and begin to crack. Do not remove them before cracking occurs. -
Finish and serve
While warm, sprinkle the cookies with sea salt flakes. Allow them to cool and deflate as they become thin and crackly. Serve with milk or as ice cream sandwiches.
Tips
Do not remove the cookies from the oven until they begin to crack. This ensures a chewy center. You can freeze the ice cream sandwiches for later enjoyment.
