MediumDifficulty

Instructions

6 steps
  1. Preheat a large skillet or saucepan over medium‑low heat.
  2. Peel and cut the sweet potatoes into uniform chunks, then add them to the pan.
  3. Add the butter cubes, water, and half of each sugar (1/2 cup brown sugar and 1/2 cup white sugar) to the pan.
  4. Stir in the vanilla, cinnamon, nutmeg (if using), and salt. Cover the pan and cook, turning occasionally, until the yams are tender, about 20‑30 minutes, adjusting heat as needed to avoid scorching.
  5. When the yams are soft, uncover and increase the heat slightly. Sprinkle the remaining brown and white sugar over the top and let the mixture bubble, stirring gently, until a thick glaze forms and coats the yams.
  6. Remove from heat and serve warm.

Tips

If the glaze thickens too quickly, add a splash more water. For extra caramel flavor, brown the butter briefly before adding it to the pan.
