Instructions

  1. Prepare Ingredients

Let the milk, butter, and eggs reach room temperature.
  2. Mix Dry Ingredients

In a large bowl, sift together the flour, cocoa powder, baking powder, sugar, and a pinch of salt.
  3. Combine Wet and Dry

Add the eggs, butter (chunky or melted), vegetable oil, milk, and vanilla extract. Mix on low speed for 2–3 minutes.
  4. Prepare Pan

Line an 8-inch springform pan with parchment paper, grease it with butter, and pour in the batter.
  5. Bake Cake

Bake at 310°F (155°C) for about 60–70 minutes.
  6. Test and Cool

Insert a toothpick; if clean, the cake is done. If wet, bake longer, checking every 5 minutes. Cool in the pan for 10 minutes, then transfer to a rack.
  7. Rest Cake

Wrap the cake in plastic wrap and chill in the fridge for 40–60 minutes, or ideally a few hours or overnight.
  8. Make Cream

Beat mascarpone with powdered sugar until creamy. Whip heavy cream separately to soft peaks, then fold it into the mascarpone mixture.
  9. Slice Cake

Cut off the top of the cake and slice it horizontally in half.
  10. Assemble Layers

Spread the cream over the bottom layer, then place the second layer on top.
  11. Make Ganache

Heat heavy cream until bubbles appear at the edges (do not boil). Pour over chopped chocolate, let sit for one minute, then whisk until smooth.
  12. Finish Cake

Pour the ganache over the cake and smooth it out. Optionally, coat the sides as well.

Tips

Use room temperature ingredients for best texture. Let the cake rest in the fridge for several hours or overnight for enhanced flavor and moisture. Where it states 'chunk or melted' butter, use room temperature solid chunks for slight chunkiness in the bake, or melted for a smoother crumb; the source allows either.
