3D Thanksgiving Turkey Cake

Create a show‑stopping Thanksgiving centerpiece by turning two stacked 9" × 13" cakes into a three‑dimensional turkey. The cake is carved, buttercream‑covered, and adorned with candy peas, carrots, and wing decorations for a fun, edible holiday masterpiece.

MediumDifficulty

Instructions

  1. Round the top of the stacked cakes to form a wide head and a narrower tail, setting aside the trimmed cake scraps.
  2. Carve the bottom of the turkey shape by angling cuts into the lower cake, creating a tapered base.
  3. In the narrow tail end, carve a small cavity where the stuffing will be placed later.
  4. Cover the entire turkey shape with brown buttercream. Optionally transfer the cake to a serving plate.
  5. Take the saved cake scraps, cut them into small cubes, spread them on a parchment‑lined tray and broil until they turn medium brown. These become the "stuffing."
  6. Combine the remaining cake scraps with vanilla buttercream in a bowl until a pliable, cake‑pop texture forms. Shape this mixture into two drumsticks and two wings, place them on the sides of the turkey, and cover with the remaining brown buttercream.
  7. Fill the previously carved cavity with the broiled cake‑cube stuffing.
  8. Pipe a border of green buttercream around the base of the cake to resemble lettuce.
  9. Scatter the Jelly Belly peas and carrots around the base for a colorful garnish.
  10. Refrigerate the assembled turkey cake for 2–3 days, preferably in a sealed container, before serving.

Tips

Broil the cake cubes just until medium brown to avoid burning; they should stay crisp for texture. Keep the cake well‑wrapped in the fridge to prevent the buttercream from drying out.

About this recipe

The turkey cake is a whimsical dessert that mimics the look of a roasted bird while tasting like classic layered cake. Brown buttercream gives a rich, caramel‑like coating, while green buttercream adds a lettuce‑like border at the base. Jelly Belly peas and carrots provide colorful accents that look like garnish on a real turkey. This cake is best served sliced on a platter, letting guests admire the detail before enjoying the fluffy cake inside. It keeps well refrigerated for a few days, making it a convenient make‑ahead option for holiday celebrations.
