A rich, flavorful chicken dish inspired by Tuscan cuisine. The breasts are lightly coated, pan‑seared, then simmered in a creamy sun‑dried tomato sauce with herbs, pepper, spinach and parmesan.
MediumDifficulty
Instructions
-
Beat the egg in a shallow bowl. In another bowl, combine the flour, salt, black pepper, oregano, thyme, paprika and garlic salt. Dip each chicken breast first in the egg, then coat with the seasoned flour mixture.
-
Heat olive oil in a large skillet over medium‑high heat. Add the coated chicken breasts and sear until golden brown on both sides, about 3–4 minutes per side. Remove chicken and set aside.
-
In the same skillet, add the sliced onion and minced garlic. Sauté until softened, about 2 minutes. Stir in the additional oregano, paprika, sun‑dried tomatoes, red bell pepper, and tomato puree; cook for another minute.
-
Deglaze the pan with white wine, scraping up any browned bits. Let the wine reduce by half, then add chicken stock. Bring to a simmer.
-
Return the chicken to the skillet, cover, and let it cook through, about 8–10 minutes.
-
Stir in the heavy cream, grated parmesan, and fresh spinach. Cook until the spinach wilts and the sauce thickens, about 2 minutes. Season with a pinch of salt and pepper to taste.
-
Garnish with chopped parsley and serve immediately with pasta, potatoes or crusty bread.
