Instructions

  1. Prepare the Base

Arrange the frozen tater tots in a buttered 9-by-13-inch baking dish.
  2. Cook the Sausage

Warm olive oil in a large skillet over medium heat. Add the sausage and onion, breaking up the meat with a wooden spoon. Cook until browned and fully cooked, about 8 to 10 minutes. Remove from heat and let cool slightly. Spread the mixture evenly over the tater tots.
  3. Make the Egg Mixture

In a large bowl, whisk together milk, half and half, seasoned salt, cayenne, eggs, bell peppers, half of the Cheddar cheese, half of the pepper jack cheese, salt, and pepper.
  4. Assemble the Casserole

Pour the egg mixture over the tots and sausage. Sprinkle the remaining cheeses on top. Cover the dish with foil and refrigerate overnight.
  5. Bake the Casserole

Preheat oven to 350°F. Bake the covered casserole for about 25 minutes. Remove the foil and continue baking until the cheese is bubbly and brown and the center is set, another 20 to 35 minutes.
  6. Serve

Remove from oven and cut into squares before serving.
