Sausage Stuffing with Bread Cut into 1 Inch Cubes

A hearty, savory stuffing that combines seasoned sausage with aromatic vegetables and toasted bread cubes. Ideal as a festive side for Thanksgiving, Christmas, or any special occasion.

MediumDifficulty

Instructions

  1. Dry the bread cubes

Preheat the oven to 250°F. Spread the 12 cups of bread cubes on a baking sheet and bake until dry, about 45 minutes. Remove and set aside.
  2. Prepare the baking dish

Raise the oven temperature to 350°F. Lightly coat a 9×13‑inch baking dish with cooking spray.
  3. Cook the sausage

In a medium pot or large skillet, brown the ground sausage over medium heat, breaking it up as it cooks. Transfer the cooked sausage (and any rendered fat) to a large mixing bowl.
  4. Sauté vegetables

Using the same pot, melt the butter over medium heat. Add the chopped onion, celery, sage, salt, and black pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  5. Combine everything

Whisk the eggs in a separate bowl. To the bowl with sausage, add the whisked eggs, stock, dried bread cubes, and the onion‑sage mixture. Toss until evenly combined, then pour the mixture into the prepared baking dish and cover with foil.
  6. Bake the stuffing

Bake for 35–40 minutes, or until the moisture is absorbed and the stuffing is set. Remove the foil and continue baking for an additional 15 minutes to crisp the top. Serve warm.

Tips

For extra flavor, use homemade chicken stock and let the bread cubes dry completely before mixing. A sprinkle of additional sage on top before the final bake adds a fragrant finish.

About this recipe

This sausage stuffing mixes ground pork sausage, butter‑sautéed onion, celery, and sage with cubed bread that’s been dried in a low‑heat oven. The mixture is bound with eggs and stock, then baked until the interior is moist and the top turns golden and crisp. The result is a rich, flavorful side that pairs beautifully with roasted turkey or ham.

Serve the stuffing hot, straight from the oven, alongside your favorite holiday mains. It also works well as a comforting addition to everyday meals, offering a satisfying blend of texture and savory depth.
