One-Pot Lentil Rice
This one‑pan lentil rice is a comforting, plant‑based dish that combines fluffy basmati rice with tender brown lentils, aromatic garlic, ginger, and a blend of warm spices. A splash of veggie stock brings everything together, while fresh lemon juice and parsley finish it with brightness.
Instructions
-
Soak the brown lentils in about 3 cups of water for 8 hours or overnight. Drain and set aside.
-
Rinse and drain the basmati rice two to three times, then set aside.
-
Finely chop the garlic and ginger; dice the red onion and tomato.
-
Heat a sauté pan over medium heat, add olive oil and the diced red onion. Sauté 4–5 minutes until softened.
-
Add the chopped garlic and ginger; sauté 1–2 minutes. Stir in the soaked lentils and cook about 1 minute.
-
Mix in the rinsed rice, pinch of salt, cumin, chili powder, sweet paprika, coriander, and black pepper.
-
Add the diced tomato and sauté roughly 1 minute. Pour in the vegetable stock and stir to deglaze the pan.
-
Increase heat to medium‑high and bring to a boil. Cover, reduce to medium‑low, and simmer 15 minutes. After the timer, turn off the heat and let the pan sit, still covered, for an additional 10 minutes to steam.
-
Fluff the rice, then plate and garnish with fresh lemon juice, parsley, a drizzle of olive oil, and freshly cracked pepper.
