Homemade Pumpkin Pie with Fresh Pumpkin
This pumpkin pie uses real roasted pumpkin puree and a buttery, flaky crust made from scratch. The filling blends sweetened condensed milk, eggs, and warm spices for a rich, holiday‑ready dessert.
Instructions
6 steps-
Prepare the pumpkin puree
Cut a suitable pumpkin in half, scoop out the seeds, and place the pieces cut‑side down on a baking sheet. Roast in a preheated oven until tender, then let cool and blend or mash into a smooth puree. -
Make the crust
In a bowl combine flour, sugar, and fine sea salt. Cut the cold butter into small cubes and work it into the dry ingredients until the mixture resembles coarse crumbs. Press the dough into a 9‑inch pie pan, forming an even layer, and chill for a few minutes. -
Blind‑bake the crust (optional)
If desired, line the crust with parchment paper, fill with pie weights, and bake at 375 °F for about 10 minutes until lightly set. Remove weights and parchment. -
Prepare the filling
In a large mixing bowl whisk together the pumpkin puree, sweetened condensed milk, eggs, egg yolk, cinnamon, ginger, cloves, vanilla extract, sea salt, and grated nutmeg until smooth. -
Assemble and bake
Pour the filling into the prepared crust. Bake at 350 °F for 45‑55 minutes, or until the center is just set and a slight jiggle remains. The edges of the crust should be golden. -
Cool and serve
Allow the pie to cool on a rack for at least 30 minutes. Slice and serve with whipped cream, ice cream, or a dusting of nutmeg or cinnamon, if desired.
Tips
Use a chilled butter and handle the dough minimally for a flakier crust. Roasting the pumpkin until fully soft ensures a smooth puree without excess water.
