Instructions

  1. Melt butter in a large pot over low heat. Add the diced onion and cook, stirring occasionally, until deeply caramelized, about 45 minutes.
  2. Stir in the minced garlic and cook for 1–2 minutes until fragrant.
  3. Increase heat to high, add the sliced mushrooms, and sauté, stirring often, for 15–20 minutes until they have cooked down.
  4. Deglaze the pot with the white wine, stirring frequently, and let it absorb, about 5 minutes.
  5. Sprinkle the flour over the vegetables and stir to combine fully. Gradually pour in the chicken stock, bring to a boil, and let the soup thicken.
  6. Use a hand blender or transfer to a regular blender to puree the soup until smooth.
  7. Return the pureed soup to the pot (if needed) and stir in the heavy cream, fresh parsley, thyme, and season with salt and pepper to taste.

Tips

For make‑ahead, refrigerate the soup up to 2 days or freeze for 3 months. When reheating, add a slurry of 2 Tbsp cornstarch mixed with 1 Tbsp water if the cream separates. If the soup isn’t thick after blending, whisk 1/3 cup cornstarch with ¼ cup cold water and boil to activate.
