Filipino Pork Ribs Kaldereta Stew

Kaldereta is a beloved Filipino stew that highlights tender pork ribs in a rich, tomato‑based sauce. This version uses pork spareribs, vegetables, and a touch of liver spread for depth of flavor, making it perfect for a comforting family meal.

MediumDifficulty

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the crushed garlic and chopped onion, sautéing until fragrant and the onion becomes translucent.
  2. Add the pork spareribs to the pot and brown them on all sides, about 5–7 minutes.
  3. Stir in the tomato sauce, liver spread, and the Knorr pork cube. Mix well to coat the ribs.
  4. Pour in the water, then bring the mixture to a boil. Reduce heat, cover, and let simmer for about 45 minutes, or until the ribs are nearly tender.
  5. Add the diced potato, sliced carrot, and sliced bell pepper to the pot. Continue simmering for another 10 minutes.
  6. Stir in the frozen green peas and chopped Thai chili peppers. Cook for an additional 5 minutes, allowing the peas to heat through.
  7. Season with salt and ground black pepper to taste. Adjust heat level with more chili if desired.
  8. Serve the kaldereta hot over steamed rice.

Tips

For extra depth, brown the ribs well before adding the sauce. If you prefer a thicker stew, mash a few potato pieces into the broth.
