Instructions
-
Make the pancake batter
Whisk together the flour, baking powder, salt and sugar in a large bowl. In a separate medium bowl, whisk the eggs, vegetable oil and milk. Combine the wet mixture with the dry ingredients, mixing until smooth and lump‑free. Divide the batter evenly into five bowls and stir in the desired amounts of pink, blue or purple food coloring. -
Cook the pancakes
Heat a griddle or frying pan to about 350°F (medium‑high). Pour roughly 1/2 cup of colored batter onto the surface. Cook 2–3 minutes until the surface bubbles, then flip and cook another minute. Continue until all batter is used, stacking each pancake as it finishes. -
Assemble the pancake cake
Arrange the cooked pancakes in a vertical stack, alternating colors or grouping them as preferred to create a layered “cake.” -
Prepare the cream cheese glaze
Using an electric mixer with a paddle attachment, beat the cream cheese on medium‑high for 4–5 minutes until light and fluffy. Add the icing sugar and beat about 1 minute more. Incorporate the lemon juice and 3 tablespoons milk, mixing on low until smooth. If the glaze is too thick, add milk one tablespoon at a time until it drizzles easily. -
Finish and serve
Drizzle the cream cheese glaze over the top of the pancake stack, allowing it to flow down the sides. Add sprinkles or a birthday candle if desired, then serve immediately.
