Aloo Paratha Without Stuffing
A soft, crispy aloo paratha that skips the traditional stuffing step. By mixing the mashed potato filling directly into the dough, you get a flavorful flatbread in less time—ideal for a quick breakfast or any meal of the day.
Instructions
-
Prepare the dough
In a bowl combine wheat flour, salt, oil and enough water to form a soft dough. Knead briefly, then let the dough rest. -
Prepare the filling
In another bowl mash the potatoes and mix in green chili‑garlic paste, coriander, red chili powder, turmeric, cumin seeds, garam masala, ajwain and a pinch of salt until evenly blended. -
Assemble and cook
Divide the rested dough into equal balls. Flatten each ball, place a spoonful of the potato mixture in the center, fold the edges over, and gently roll into a circle. Cook on a hot griddle, brushing lightly with oil, until both sides turn golden brown and crisp. -
Serve
Serve the hot aloo parathas with curd, pickle and butter as desired.
Tips
If the dough feels dry, add a little more water; if too sticky, dust with extra flour. Cook over medium heat to ensure the interior cooks through without burning the exterior.

About this recipe
Aloo paratha is a classic Indian flatbread packed with seasoned mashed potatoes. This version eliminates the separate stuffing step, so the potatoes are blended into the dough before rolling, giving you a uniformly spiced, fluffy interior and a golden, crisp exterior. The result is a comforting, hearty bread that pairs perfectly with cool curd, tangy pickle, or a dab of butter.
Serve these hot parathas straight from the pan for a satisfying start to the day, or as a tasty side for lunch or dinner. They’re simple enough for a weekday rush yet flavorful enough to impress guests.
